About the Role The role sits within the Catering Department, which manages one of the largest and most diverse catering operations in Hong Kong. The department provides a wide range of catering, sports and recreation facilities for Members and their guests across three Clubhouses, while Happy Valley and Sha Tin Racecourses host numerous catering facilities for Members, non-members and corporate functions. The job holder supports kitchen operations, including food preparation standards, hygiene, mise en place, quality checks, stock control, briefings, requisitions, training of cooks, and compliance with food safety and health and safety requirements. The role requires punctuality, efficiency and courteous guest-facing conduct. Key Responsibilities • Maintain kitchen hygiene and cleanliness, including pot and dish wash areas, ensuring tools are in good condition and correct storage and stock rotation. • Check and control mise en place, ensuring it is well organised for service the following day. • Taste and examine food prepared for freshness and required quality. • Set up the section as required by supervisor, ensuring it is checked before service. • Minimise food wastage. • Attend and comprehend all information discussed at pre-function service briefing sessions. • Assist in making food requisitions in a timely manner. • Troubleshoot issues that may arise in the kitchen and report any unresolved problems to the supervisor. • Provide basic on-the-job training, coaching and development of cooks. • Follow the food safety programme and ensure all associates have a working knowledge of the programme, assisting them in the performance of their duties. Required Experience & Qualifications • Conversant with individual menu items, including basic ingredients, methods of preparation and presentation style. • Punctual, efficient and courteous, maintaining a professional, pleasing and helpful attitude towards each guest. • Compliance with all relevant Workplace Health and Safety, Occupational Health and Safety rules and HACCP requirements. • Working knowledge of the food safety programme.
